Turkey Meatloaf

Ina Garten’s turkey meatloaf recipe comes from a time in my life when I was watching a lot of Food Network TV.  Ina’s recipes tend to be pretty fool proof and also make a metric ton of food.  This recipe is actually halved from the original with some minor adaptations.

1 onion, chopped
1T olive oil
1t salt
1/2t pepper
1/4t dried thyme
1/4c Worcestershire sauce
3oz chicken stock
1t tomato paste
2.5 lbs ground turkey
3/4 dried bread crumbs
2 eggs, beaten
3 oz ketchup

Preheat oven to 325 F and line a rimmed baking sheet with foil.  Saute onions, thyme, salt and pepper in olive oil over medium heat until onions are very soft, about 15 minutes.  Add Worchestershire, chicken stock and tomato paste and mix to combine.  Cool slightly.  In a bowl, combine turkey, eggs, bread crumbs and onion mixture.  Using your hands, mix well and pour contents onto lined sheet pan.  Shape into a loaf, glaze the loaf with ketchup, and bake until the internal temp is 160 F (about 90 mintues).
