Oven Fries

Yukon Gold potato planks, roasted in a hot oven. Brought to us by the nice ATK people.

2 lbs yukon gold potatoes, halved and cut into 1/4″ planks
3T cornstarch
3/4c water
3T veg oil

Preheat oven to 425. Spray a baking pan with nonstick cook spray. Add the veg oil to the pan and tilt to coat entire pan. Combine water and cornstarch and microwave 20 seconds at a time until it forms a goo. Toss potato planks in the goo and spread out on a single layer on the pan. Cover the pan tightly with greased foil and bake for 12 minutes. Remove foil and bake 10 to 18 minutes. Flip potatoes and return to the oven for another 10 to 18 minutes. Remove from oven and sprinkle with salt.
