Lemon Ricotta Pancakes

Like pancakes but even more delicious.  Serve with a simple raspberry coulis.  Recipe originated from the America’s Test Kitchen television program.

2/3c all purpose flour
1/2t baking soda
1/2t salt
8oz whole milk ricotta
1/3c whole milk
2 egg yolks
1/2t vanilla
1t lemon zest
2T melted butter
4 egg whites
1/4c sugar

Combine and whisk together flour, baking soda and salt in medium bowl.  Add ricotta, milk, egg yolks, vanilla, zest, and butter.  Beat egg whites and sugar to soft peaks and stir in 1/3 of the egg whites to the batter then gently fold in the remaining egg whites.  Heat nonstick skillet over medium heat and spray with nonstick spray.  Form pancakes from 1/4c of batter and cook on each side for 2 to 3 minutes.
