The Joy of Cooking was the first cookbook I owned. The recipe that constantly return to is their recipe for hummus. It strikes what I think is a perfect balance of chickpea, tahini and lemon. Also, the addition of cumin amazing.
15oz can of chickpeas
1/3 cup lemon juice
3T tahini
2 cloves garlic, minced
1/2t cumin
salt to taste
olive oil and paprika to garnish
Puree all ingredients until smooth except the garnish in a food processor. Add water to adjust the consistency and salt to taste. Place hummus in a bowl and drizzle with olive oil and sprinkle with paprika.
