A hit during a hot summer when ripe tomatoes are plentiful.
1 English cucumber, halved lengthwise and thinly sliced
1 lb tomatoes, cherry, grape, heirloom, roma, etc. cut into bite-size pieces
1 shallot, thinly sliced
1/4c chopped parsley
juice from 1 lemon
1/4c olive oil
1/2c feta cheese, crumbled
salt and pepper to taste
Combine all ingredients except the feta and toss thoroughly. Add feta and mix until combined. Season with salt and pepper to taste.
